How to Keep the Topping Crisp

Use cold butter when making the oat topping and stop mixing once coarse crumbs form. Butter that is too soft blends into the flour and produces a flatter, less craggy topping.

The apple layer should be bubbling at the edges before the crisp comes out of the oven. That bubbling shows the cornstarch has thickened the apple and caramel juices rather than leaving a watery filling under the oats.

How to Store Leftovers

Let Caramel Apple Crisp cool all the way before sealing the container. Room-temperature storage is suitable for up to 2 days; refrigerate for up to 4 days if keeping the batch longer or the kitchen is warm.

How to Reheat

Reheat a portion uncovered in a 325°F oven until the apples are warm and the oat topping is crisp again. A microwave warms the fruit quickly but softens the crumble, so use it only when texture is less important.
