Why the Tomato Needs to Drain

Seed and drain the tomatoes before seasoning them so the toast stays crisp under the topping. Rub the bread with garlic while it is still warm, then add the tomato mixture only when you are ready to serve.

Place the sardines on top rather than stirring them into the tomatoes so the fillets keep their shape and each toast gets an even portion.

How to Store Leftovers

Store tomato topping and sardines separately in the refrigerator for up to 2 days. Toast bread fresh and do not store assembled toast.

Freezing is not recommended.

How to Reheat

No reheating is needed for the topping. Re-toast bread if necessary and assemble with chilled or room-temperature ingredients.

What to Serve With It

  • white bean salad
  • cucumber slices
