Ingredients
For the Peach Layer
- 3 cups diced ripe peaches
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch mixed with 1 teaspoon water
For the Overnight Oats
- 2 cups old-fashioned rolled oats
- 2 cups milk of choice
- 1 cup plain or vanilla Greek yogurt
- 2 tablespoons chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
For the Crumble Topping
- 1/2 cup old-fashioned rolled oats
- 1/4 cup chopped pecans
- 1 tablespoon maple syrup
- 1 teaspoon melted butter or coconut oil
- Pinch of cinnamon
Substitutions
- Use nectarines, plums, apples, or berries in the fruit layer, adjusting cooking time.
- Use dairy-free milk and yogurt for a vegan version, and coconut oil in the crumble.
- Replace pecans with walnuts, almonds, sunflower seeds, or additional oats.
Instructions
Step 1: Cook the peaches
Simmer peaches, maple syrup, cinnamon, and lemon juice for 4 to 5 minutes. Stir in the cornstarch slurry and cook until lightly thickened. Cool.

Step 2: Toast the crumble
Toast oats and pecans in a dry skillet for 2 minutes. Add maple syrup, butter, and cinnamon, then stir until fragrant and lightly crisp. Cool completely.

Step 3: Mix the oats
Stir rolled oats, milk, yogurt, chia seeds, maple syrup, vanilla, cinnamon, and salt in a large bowl until evenly combined.
Step 4: Assemble the jars
Divide half the oat mixture among four jars, add peach compote, then top with the remaining oats. Reserve the crumble separately.

Step 5: Chill overnight
Cover and refrigerate for at least 8 hours so the oats and chia absorb the liquid.
Step 6: Finish and serve
Stir each jar, add extra yogurt or milk if needed, and top with crumble and fresh peach pieces immediately before eating.

How the Cobbler Version Is Different
The cobbler variation leans into dessert-style spice and topping cues, so it tastes intentionally richer and more like peach cobbler while still using an overnight-oat base.
How to Store Leftovers
- Refrigerate covered oat jars for up to 4 days.
- Store the crumble in a separate airtight container at room temperature for up to 5 days.
- Add fresh peach garnish only when serving.
Serving Leftovers
- Serve cold, or microwave one jar without its lid in 30-second intervals until warm.
- Stir in extra milk before heating so the oats remain creamy.
- Add yogurt, fresh peaches, and crumble after warming.
Ways to Serve
- A boiled egg
- Extra Greek yogurt
Common Mistakes to Avoid
- Using steel-cut oats without changing the method.
- Adding warm peach compote to the yogurt mixture.
- Storing the crumble inside the jar overnight.
- Skipping the final consistency adjustment with milk.
