Ingredients
For the Salad
- 2 cans (15 ounces each) chickpeas, rinsed and dried
- 1 English cucumber, diced
- 2 cups chopped tomatoes, seeded
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 carrots, diced
- 3/4 cup crumbled feta
- 1/2 cup chopped parsley
For the Crunch
- 3 pita breads, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
For the Dressing
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 garlic clove, grated
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Substitutions
- White beans can replace chickpeas with a softer texture.
- Kalamata olives can replace carrots for a brinier salad.
Instructions
Step 1: Toast the Pita
Heat oven to 400°F. Toss pita pieces with olive oil and salt and bake 6 to 8 minutes until crisp and golden.

Step 2: Dry the Chickpeas
Rinse chickpeas and pat very dry so they do not dilute the dressing.
Step 3: Prepare the Vegetables
Dice cucumber, seeded tomato, peppers, and carrots into even bite-size pieces.

Step 4: Whisk the Dressing
Whisk olive oil, lemon juice, vinegar, oregano, garlic, salt, and pepper.
Step 5: Combine the Base
Toss chickpeas, vegetables, feta, and parsley with most of the dressing.
Step 6: Add the Crunch
Fold in pita immediately before serving or scatter it on top.

Step 7: Finish
Drizzle with remaining dressing and serve at cool room temperature.

What Makes the Crunch Version Different
This version puts more emphasis on crisp vegetables and contrasting textures. The chickpeas are part of a larger crunchy salad rather than the sole focus, so it works better when you want a substantial fresh bowl.
How to Store Leftovers
Refrigerate the dressed salad without pita for up to 4 days. Store toasted pita airtight at room temperature and feta separately if possible.
Do not freeze the assembled salad because raw vegetables become watery.
What to Serve With It
- baked salmon
- warm flatbread
