Ingredients
For the Chicken
- 4 bone-in, skin-on chicken thighs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
For the Rice
- 1 small onion, diced
- 1 carrot, diced
- 2 garlic cloves, minced
- 1 cup long-grain white rice, rinsed
- 2 cups low-sodium chicken broth
- 1/2 teaspoon dried thyme
- 1/2 cup frozen peas
- 2 tablespoons chopped parsley
Substitutions
- Quinoa or another cooked grain can replace rice; prepare it separately according to its own liquid ratio and timing.
Instructions
Step 1: Season and brown chicken
Season chicken with paprika, garlic powder, salt, and pepper. Brown skin-side down in oil for 5 minutes; flip for 2 minutes and transfer to a plate.

Step 2: Cook aromatics
Pour off excess fat, leaving 1 tablespoon. Cook onion and carrot for 4 minutes; add garlic for 30 seconds.
Step 3: Toast the rice
Stir in rinsed rice and thyme for 1 minute, then add broth and scrape up browned bits.

Step 4: Simmer
Nestle chicken on top, skin-side up. Cover and simmer on low for 22 to 25 minutes, until rice is tender and chicken reaches 165°F.

Step 5: Finish
Remove from heat, scatter peas over the rice, cover for 5 minutes, then fluff and add parsley.

Protecting the Rice Texture
Rinse the long-grain rice before it goes into the pan and keep the chicken on top once the broth is added. Stirring during the covered simmer releases extra starch and can turn the rice pasty.
After the heat is turned off, the 5-minute covered rest finishes the rice with residual steam and warms the peas without overcooking them.
How to Store Leftovers
Refrigerate One Pot Chicken and Rice within 2 hours once the chicken has cooled enough to store safely, and use leftovers within 3 to 4 days. Keep the chopped parsley separate and scatter it over the rice after reheating.
How to Reheat
Reheat the chicken in One Pot Chicken and Rice gently so it becomes hot without spending unnecessary time over high heat. Covering for part of the process can reduce drying; finish with fresh garnishes afterward.
