Ingredients
Main Ingredients
- 1 1/2 pounds Italian sausage links, mild or hot
- 1 tablespoon olive oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large yellow onion, sliced
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon fennel seeds, optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup chicken broth
- 2 tablespoons chopped parsley
For Serving
- 4 crusty rolls or cooked pasta, optional
- Grated parmesan, optional
Substitutions
Use hot or mild Italian sausage according to preference. Chicken or turkey Italian sausage also works; cook poultry sausage to an internal temperature of 165°F (74°C), compared with 160°F (71°C) for pork sausage.
Any combination of red, yellow, orange, or green bell peppers can be used. If you do not have chicken broth, use water plus a small splash of vinegar to loosen the browned bits in the skillet.
Instructions
Step 1: Brown the sausage
Heat the oil in a large skillet over medium-high heat. Brown the sausages for 8 to 10 minutes, turning occasionally, then transfer to a plate.

Step 2: Cook the vegetables
Add the peppers and onion to the skillet. Cook for 8 minutes until softened and lightly browned.

Step 3: Add the seasonings
Stir in garlic, oregano, fennel seeds, salt, and pepper for 30 seconds.
Step 4: Finish the dish
Slice the sausage into thick pieces and return it to the pan with the broth. Cover and simmer 6 to 8 minutes, until the sausage reaches 160°F.

Step 5: Serve
Sprinkle with parsley and serve in rolls, over pasta, or on its own.

How to Store Leftovers
Refrigerate the cooked portion of Italian Sausage Peppers and Onions within 2 hours in a sealed container and use it within 3 to 4 days. Keep the chopped parsley, parmesan, and any rolls separate; add or toast them only when serving.
How to Reheat
Warm the sausage, peppers, and onions together in a covered skillet over medium-low heat with a small splash of broth. Stir occasionally until the sausage is hot and the vegetables are tender again.
If serving in rolls, toast or warm the bread separately so it does not absorb steam from the filling.
What to Serve With It
- Crusty rolls
- Polenta or pasta
