Ingredients
For the Chicken
- 1 1/2 pounds boneless, skinless chicken breasts, pounded evenly
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
For the Peach Glaze
- 1/2 cup peach preserves
- 2 tablespoons lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon hot sauce
For Assembly
- 8 small flour tortillas
- 2 cups shredded cabbage slaw mix
- 1 avocado, sliced
- 1 fresh peach, thinly sliced
- 1 jalapeño, thinly sliced
- 1/4 cup chopped cilantro
Substitutions
- Chicken thighs can replace breasts and must reach 165°F.
- Pickled jalapeños can replace fresh for less raw heat.
Instructions
Step 1: Make the Glaze
Simmer peach preserves, lime juice, vinegar, and hot sauce for 3 minutes until smooth. Reserve half in a clean bowl.

Step 2: Heat the Grill
Preheat grill pan to medium-high.
Step 3: Season the Chicken
Rub chicken with oil, chili powder, salt, and pepper.

Step 4: Grill
Cook 5 to 6 minutes per side, brushing with the cooking portion of glaze near the end, until 165°F.

Step 5: Rest and Slice
Rest chicken 5 minutes and slice across the grain.
Step 6: Warm the Tortillas
Warm tortillas 20 seconds per side.
Step 7: Assemble
Layer slaw, glazed chicken, avocado, peach, jalapeño, and cilantro. Drizzle with reserved clean glaze and serve.

Reserve Clean Glaze for Serving
Divide the peach glaze before it touches the chicken. Use one portion near the end of grilling and keep the other clean for drizzling over the finished tacos. Adding the glaze late prevents its sugars from burning, while fresh peach, avocado, and cilantro stay brighter when they are added after cooking.
How to Store Leftovers
Refrigerate chicken within 2 hours for up to 3 days. Store all toppings and tortillas separately.
Freeze glazed chicken for up to 2 months; do not freeze assembled tacos or fresh fruit.
How to Reheat
Warm chicken covered in a skillet until 165°F and tortillas separately. Add slaw, avocado, peaches, jalapeño, cilantro, and clean glaze after heating.
What to Serve With It
- cilantro rice
- lime slaw
- sparkling peach water
