Ingredients

For the Skillet

  • 12 ounces breakfast sausage links, sliced
  • 1 tablespoon olive oil
  • 1 pound Yukon Gold potatoes, diced small
  • 1 small red bell pepper, diced
  • 1 small yellow onion, diced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons pure maple syrup

For the Eggs

  • 6 large eggs
  • 2 tablespoons milk
  • 1/2 cup shredded cheddar
  • 2 green onions, sliced

Substitutions

Use bulk breakfast sausage instead of links if preferred; brown it thoroughly and drain excess fat before cooking the potatoes. Turkey breakfast sausage also works; cook it to an internal temperature of 165°F (74°C).

Sweet potato can replace some or all of the Yukon Gold potatoes, but cut it into small even cubes because it can take slightly longer to soften.

Instructions

Step 1: Brown the sausage

Cook the sausage in a large skillet over medium heat until browned, no pink remains, and it reaches 160°F. Transfer to a plate.

Step 2: Cook the potatoes

Add oil and potatoes. Cover and cook 10 minutes, stirring twice, then uncover and cook until crisp at the edges.

Step 3: Add vegetables

Stir in bell pepper, onion, paprika, salt, and pepper. Cook 5 minutes.

Step 4: Glaze the sausage

Return sausage to the skillet and drizzle with maple syrup. Toss for 1 minute.

Step 5: Add the eggs

Whisk eggs and milk. Make spaces in the skillet and pour in the eggs; stir gently until softly set. Add cheddar and green onions.

Balancing Crisp Potatoes and Soft Eggs

Give the potatoes their covered cooking time before adding the pepper and onion. That lets the centers soften; the uncovered stage then creates browned edges without forcing the vegetables to cook for too long.

The maple syrup belongs on the browned sausage just before the eggs are added. A brief toss coats the sausage without leaving the syrup over direct heat long enough to scorch.

How to Store Leftovers

Transfer leftovers to a shallow container and refrigerate within 2 hours; use within 3 to 4 days. Because the skillet includes eggs, potatoes, sausage, and cheese, freezing is possible but the egg and potato textures are noticeably softer after thawing.

Store the green onions separately if you want them fresh on reheated portions.

How to Reheat

Reheat the potato, sausage, pepper, and onion mixture in a covered skillet over medium-low heat until the potatoes are hot. Stir only occasionally so the browned edges are not completely lost.

For the best egg texture, reheat a single portion briefly and stop as soon as the eggs are warm; add cheddar and green onions at the end.

Ways to Serve

  • Toast or biscuits
  • Salsa or hot sauce
