Ingredients
For the Bowls
- 12 ounces breakfast sausage
- 1 pound Yukon Gold potatoes, diced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 large eggs
- 1 tablespoon butter
- 1 cup shredded cheddar
Toppings
- 1 avocado, sliced
- 1/2 cup salsa
- 2 green onions, sliced
- Hot sauce, optional
Substitutions
Turkey or chicken breakfast sausage can replace pork sausage; cook poultry sausage to an internal temperature of 165°F (74°C), rather than the 160°F (71°C) used for pork sausage. Brown it fully, then use the rendered fat only if there is enough and it tastes clean; otherwise cook the potatoes in the olive oil.
Pepper Jack can replace cheddar, and roasted sweet potato can replace Yukon Gold potatoes for a sweeter bowl.
Instructions
Step 1: Cook the potatoes
Heat oil in a large skillet over medium heat. Add potatoes, paprika, salt, and pepper. Cover 8 minutes, then uncover and cook until browned and tender.

Step 2: Brown the sausage
Cook sausage in a separate skillet, breaking it into crumbles, until browned and 160°F.
Step 3: Scramble the eggs
Whisk eggs with a pinch of salt. Melt butter over medium-low heat and cook, stirring gently, until softly set.

Step 4: Assemble
Divide potatoes, sausage, eggs, and cheddar among four bowls.

Step 5: Finish
Add avocado, salsa, green onions, and hot sauce.

How to Store Leftovers
Refrigerate the cooked sausage, potatoes, eggs, and cheese within 2 hours and use within 3 to 4 days. Store avocado, salsa, green onions, and hot sauce separately and add them only after reheating.
How to Reheat
Reheat the sausage and potatoes first, then add the eggs for the final part of heating so they stay soft rather than rubbery. A covered skillet over medium-low heat works well for a single portion.
Keep avocado, salsa, green onions, and hot sauce cold and add them after the bowl is warm.
Common Mistakes to Avoid
- Assembling before all hot components are ready.
- Adding crisp toppings under hot ingredients.
- Pouring salsa over the crisp potatoes too early, which can soften their browned edges.
